Hamilton describes how the Cheyennes hunt buffalo, drying and turn the meat and tallow into pemmican, being 5 times as energy dense as fresh meat. He also describes the practice of using dupuyer - a long fatty strip of flesh along the buffalo backbone that is cherished above all else.

The next morning, before daylight, fifty hunters and about twenty squaws with pack animals were assembled, ready to start on the buffalo hunt. We travelled about ten miles, when the scouts discovered a herd and reported their location to the hunting chief. He was thoroughly acquainted with the topography of the country and led us on a long detour, so as to get on the leeward side of the herd. As soon as we reached there, the Indians stripped to breech-clout and advanced, leading their running horses. The chief now divided the hunters in two divisions, in order to get what buffalo were wanted in the smallest possible area. It is necessary to approach as close as possible before raising the herd, for when raised they travel fast and no laggard of a horse can overtake them. Generally each division has a leader, who gives the order to go. We rode to within a quarter of a mile of the herd before the word was given. Here would have been a grand scene for an artist to put on canvas—this wild array of naked Indians, sending forth yell after yell and riding like demons in their eagerness to bring down the first buffalo. For this is quite a feat and is commented upon by the whole village. Swift Runner and his cousin had the fastest horses in our division and brought down the first buffalo, much to the chagrin of many a young brave, who coveted that honor that they might receive smiles from their lady loves. My pony was close on the heels of the leaders, and Swift Runner pointed out a fat cow for me. In a few jumps I was alongside and fired, greenhorn like, at the cow's kidneys. As luck would have it, however, I broke her back and she dropped. Swift Runner gave a yell of delight at my success. I should have put the shot just behind the shoulder. There was yelling and shooting in every direction; and many riderless ponies were mixed in with the buffalo, with Indians after them, reckless if they in turn were dismounted as their friends had been, by the ponies stepping into prairie-dog or badger holes. Many an Indian has come to grief by having an arm or leg broken in this way. Ponies are sure-footed, but in a run such as this one, where over a thousand buffalo are tearing at full speed over the prairie, a dust is created which makes it impossible for the ponies to see the holes, hence the mishaps, which are very common. All the meat required lay in an area of three quarters of a mile. I had brought down four and received great praise from the Indians. I could have done much better, but, boy-like, I wanted to see the Indians shoot their arrows, which many of them used. One arrow was sufficient to bring the buffalo to its knees. They shot behind the shoulder, sending the arrow deep enough to strike the lungs. One shot there is enough for any animal in the United States.
Now came the butchering, which was completed in two hours, and each pony was packed with three hundred pounds of the choicest of meat. Several Indians who had been thrown, limped somewhat, but none were seriously hurt.
We arrived at the village about sundown and found the whole tribe lined up to greet us and to ascertain how successful we had been. A feast had been prepared and was awaiting our coming; and as for myself, I was "wolfish,” —which is a mountain man's expression for hungry,—for I had tasted no food since five o'clock in the morning. After supper incidents of the hunt were gone over, and listened to with interest by all. Our party congratulated me warmly on my success, and it was commented on also by the Indians, which pleased the boys immensely. If a white man fails to acquit himself creditably it invariably casts a reflection on all whites. The Cheyennes were and are today a proud and brave people. Their domestic habits were commendable and could be followed to advantage by many white families. To violate the marriage vow meant death or mutilation. This is a rule which does not apply to all tribes. Meat is their principal food, although berries of different kinds are collected in season, as well as various roots. The kettle is on the tripod night and day. They use salt when they can get it, and are very fond of molasses, sugar, coffee, and flour. They are hospitable to those whom they respect, and the reverse to those for whom they have contempt.
Most tribes of plains Indians dry their meat by cutting it in thin flakes and spreading it on racks and poles in the sun; although in damp or wet weather it is put inside of lodges, where it will dry, but not so well as in the sun. Mountain men follow the same practice and use the meat when game is scarce, and this often occurs. Pemmican is manufactured in the following manner. The choicest cuts of meat are selected and cut into flakes and dried. Then all the marrow is collected and the best of the tallow, which are dissolved together over a slow fire to prevent burning. Many tribes use berries in their pemmican. Mountaineers always do unless they have sugar. The meat is now pulverized to the consistency of mince meat; the squaws generally doing this on a flat rock, using a pestle, many specimens of which may be seen on exhibition in museums. A layer of meat is spread, about two inches thick, the squaws using a wooden dipper, a buffalo horn, or a claw for this work. On this meat is spread a certain amount of the ingredients made from the marrow and tallow, the proportion depending on the taste. This same process is repeated until the required amount is secured. One pound of pemmican is equal to five pounds of meat.
Buffalo tongues are split the long way and dried for future use, and thus prepared are a delicacy fit for a prince. Another important article of food, the equal of which is not to be had except from the buffalo, is “depuyer” (dépouille). It is a fat substance that lies along the backbone, next to the hide, running from the shoulder-blade to the last rib, and is about as thick as one's hand or finger. It is from seven to eleven inches broad, tapering to a feather edge on the lower side. It will weigh from five to eleven pounds, according to the size and condition of the animal. This substance is taken off and dipped in hot grease for half a minute, then is hung up inside of a lodge to dry and smoke for twelve hours. It will keep indefinitely, and is used as a substitute for bread, but is superior to any bread that was ever made. It is eaten with the lean and dried meat, and is tender and sweet and very nourishing, for it seems to satisfy the appetite. When going on the war-path the Indians would take some dried meat and some depuyer to live on, and nothing else, not even if they were to be gone for months. I have been asked many times regarding depuyer by different ones who have been astonished when told of its merits as a substitute for other food, and surprised that it was so little known except by mountain men and Indians. Trappers would pay a dollar a pound for it, and I do not believe that bread would bring that price unless one were starving. As I have said, it is a substitute for bread; and when you are invited to an Indian lodge your host will present you with depuyer just as you would present bread to a guest. You may be sure should they fail to present you with depuyer that you are an unwelcome guest.

THE BUFFALOE OR BISON
This animal has been so minutely described by travellers that I have considered it of little importance to enter into the details of its shape and size, and shall therefore omit those descriptions with which I suppose the public to be already acquainted, and try to convey some idea of its peculiarities which probably are not so well known. The vast numbers of these animals which once traversed such an extensive region in Nth. America are fast diminishing. The continual increasing demand for robes in the civilised world has already and is still contributing in no small degree to their destruction, whilst on the other hand the continual increase of wolves and other 4 footed enemies far exceeds that of the Buffaloe when these combined efforts for its destruction is taken into consideration, it will not be doubted for a moment that this noble race of animals, so useful in supplying the wants of man, will at no far distant period become extinct in North America. The Buffaloe is already a stranger, altho so numerous 10 years ago, in that part of the country which is drained by the sources of the Colerado, Bear and Snake Rivers and occupied by the Snake and Bonnack Indians. The flesh of the Buffaloe Cow is considered far superior to that of the domestic Beef and it is so much impregnated with salt that it requires but little seasoning when cooked. All the time, trouble and care bestowed by man upon improving the breed and food of meat cattle seems to be entirely thrown away when we compare those animals in their original state which are reared upon the food supplied them by Nature with the same species when domesticated and fed on cultivated grasses and grains and the fact seems to justify the opinion that Nature will not allow herself to be outdone by art for it is fairly proved to this enlightened age that the rude and untaught savage feasts on better beef and Mutton than the most learned and experienced Agriculturists now if every effect is produced by a cause perhaps I may stumble upon the cause which produces the effect in this instance at any rate I shall attempt it - In the first place, the rutting season of the Buffaloe is regular commencing about the 15th of July when the males and females are fat, and ends about the 15 of Aug. Consequently the females bring forth their young in the latter part of April and the first of May when the grass is most luxuriant and thereby enables the cow to afford the most nourishment for her calf and enables the young to quit the natural nourishment of its dam and feed upon the tender herbage sooner than it would at any other season of the year. Another proof is that when the rutting season commences the strongest healthiest and most vigorous Bulls drive the weaker ones from the cows hence the calves are from the best breed which is thereby kept upon a regular basis. In summer season they generally go to water and drink once in 24 hours but in the winter they seldom get water at all. The cows are fattest in Octr and the Bulls in July The cows retain their flesh in a great measure throughout the winter until the Spring opens and they get at water from whence they become poor in a short time So much for the regularity of their habits and the next point is the food on which they subsist The grass on which the Buffaloe generally feeds is short, firm and of the most nutritious kind. The salts with which the mountain regions is much impregnated are imbibed in a great degree by the vegetation and as there is very little rain in Summer Autumn or winter the grass arrives at maturity and dries in the sun without being wet it is made like hay; in this state it remains throughout the winter and while the spring rains are divesting the old growth of its nutricious qualities they are in the meantime pushing forward the new - The Buffaloe are very particular in their choice of grass always preferring the short of the uplands to that of the luxuriant growth of the fertile alluvial bottoms. Thus they are taught by nature to choose such food as is most palatable and she has also provided that such as is most palatable is the best suited to their condition and that condition the best calculated to supply the wants and necessities of her rude untutored children for whom they were prepared. Thus nature looks with a smile of derision upon the magnified efforts of art to excel her works by a continual breach of her laws The most general mode practiced by the Indians for killing Buffaloe is running upon horseback and shooting them with arrows but it requires a degree of experience for both man and horse to kill them in this manner with any degree of safety particularly in places where the ground is rocky and uneven. The horse that is well trained for this purpose not only watches the ground over which he is running and avoids the holes ditchs and rocks by shortening or extending his leaps but also the animal which he is pursuing in order to prevent being `horned' when tis brot suddenly to bay which is done instantaneously and if the Buffaloe wheel to the right the horse passes as quick as thought to the left behind it and thereby avoids its horns but if the horse in close pursuit wheels on the same side with the Buffaloe he comes directly in contact with its horns and with one stroke the horses entrails are often torn out and his rider thrown headlong to the ground After the Buffaloe is brought to bay the trained horse will immediately commence describing a circle about 10 paces from the animal in which he moves continually in a slow gallop or trot which prevents the raging animal from making a direct bound at him by keeping it continually turning round until it is killed by the rider with arrows or bullets. If a hunter discovers a band of Buffaloe in a place too rough and broken for his horse to run with safety and there is smooth ground nearby he secretly rides on the leward side as near as he can without being discovered he then starts up suddenly without apparently noticing the Buffaloe and gallops in the direction he wishes the band to run the Buffaloe on seeing him run to the plain start in the same direction in order to prevent themselves from being headed and kept from the smooth ground The same course would be pursued if he wished to take them to any particular place in the mountains - One of the hunters first instructions to an inexperienced hand is "run towards the place where you wish the Buffaloe to run but do not close on them behind until they get to that place" for instance if the hunter is to the right the leading Buffaloe keep inclining to the right and if he should fall in behind and crowd upon the rear they would separate in different directions and it would be a mere chance if any took the direction he wished them - When he gets to the plain he gives his horse the rein and darts thro the band selects his victim reins his horse up along side and shoots and if he considers the wound mortal he pulls up the rein the horse knowing his business keeps along galloping with the band until the rider has reloaded when he darts forward upon another Buffaloe as at first A Cow seldom stops at bay before she is wounded and therefore is not so dangerous as a Bull who wheels soon after he is pushed from the band and becomes fatigued whether he is wounded or not. When running over ground where there is rocks holes or gullies the horse must be reined up gradually if he is reined at all there is more accidents happens in running Buffaloes by the riders getting frightened and suddenly checking their horses than any other way. If they come upon a Gully over which the horse can leap by an extra exertion the best plan is to give him the rein and the whip or spur at the same time and fear not for any ditch that a Buffaloe can leap can be cleared with safety by a horse and one too wide for a Buffaloe to clear an experienced rider will generally see in time to check his horse gradually before he gets to it - And now as I have finished my description of the Buffaloe and the manner of killing them I will put a simple question for the reader's solution -
If Kings Princes Nobles and Gentlemen can derive so much sport and Pleasure as they boast of in chasing a fox or simple hare all day? which when they have caught is of little or no benefit to them what pleasure can the Rocky Mountain hunter be expected to derive in running with a well trained horse such a noble and stately animal as the Bison? which when killed is of some service to him. There are men of noble birth noble Estate and noble minds who have attained to a tolerable degree of perfection in fox hunting in Europe and Buffaloe hunting in the Rocky Mountains, and I have heard some of them decide that the points would not bear a comparison if the word Fashion could be stricken from the English language It also requires a considerable degree of practice to approach on foot and kill Buffaloe with a Rifle A person must be well acquainted with the shape and make of the animal and the manner which it is standing in order to direct his aim with certainty - And it also requires experience to enable him choose a fat animal the best looking Buffaloe is not always the fattest and a hunter by constant practice may lay down rules for selecting the fattest when on foot which would be no guide to him when running upon horseback for he is then placed in a different position and one which requires different rules for choosing.

The Great Fur Land - The Great Fall Hunt
"In such manner has the work of the semi-annual hunts been conducted for over half a century, and in the same way will it continue, growing less in importance yearly, until the last buffalo shall have ceased to exist. Their importance the years gone by can hardly be overestimated. They have furnished the main support of a population numbering ten thousand souls."
The serious decrease in the number of buffalo, which has been observed year by year, threatens to produce a very disastrous effect upon the provision trade of the country; and the time can not be far distant when some new provision must be found to take the place of the old. We recollect very well when pemmican, which now can be procured with difficulty for one shilling and three pence a pound, could be had at two pence, and dried meat formerly costing two pence now costs ten pence. This is a fact which threatens to revolutionize in a manner the whole business of the territory, but more particularly the transport service of the company. The camp, which has for days been on the verge of starvation, after the return of the hunters from the chase becomes a scene of feasting and revelry; and gastronomic feats are performed which seem incredible to those unacquainted with the appetite begotten of a roving life, unlimited fresh air, and the digestible nature of the food. As with the daughters of the horse-leech, there is a continued demand for more, until the consumption of tongues, melting hump, and dripping ribs, bids fair to threaten the entire camp with immediate asphyxia. All night long the feasting continues among the groups formed about the camp-fires, and roasting, boiling, and stewing are the order of the hour. Were the supply certain to be exhausted on the morrow, the consumption would go on just the same, the improvident hunter entertaining no idea of reserving of present excess for future scarcity. Happily, the supply is abundant, for it sometimes happens that the carts are fully loaded with meat in a single chase. In that event, the major part of them are at once started homeward in charge of boys and the younger men, while the hunters follow up the herd to obtain a further supply of robes. A view of the prairie, after a run in which the acquisition of robes is the sole object, reveals the enormous waste of life which annually occurs. The plain for miles is covered with the carcasses of buffalo from which nothing has been taken save the hides, tongues, and it may be the more savory portions of the hump; the remainder being left to the wolves and carrion-birds. Should the first run fail to secure a sufficient supply of meat, however, the chase is continued until the complement is obtained, each hunter starting his carts homeward as they are filled.

An enterprising and flourishing province is springing up about the site of the little colony of hunters, rendered all the more easy of establishment by the stability and wealth derived from the chase. But, unfortunately, the older nomads are crowded by this civilization. They belong to a race apart, and are scared by fences and enclosures, as if they confined even the free air within bounds and limits. Gradually they retire before it, following the buffalo closer and closer to the Rocky Mountains, until finally both will disappear together.

THE BELUGA HUNTERS IN PREHISTORIC TIMES - A MERE 200 YEARS AGO - THE MACKENZIE River delta and adjacent coasts were the richest, most populous region in what is now the Canadian Arctic. About 30,000 bowhead whales summered in the shallow Beaufort Sea, 50-ton (45-tonne) feasts for hunters skillful and daring enough to kill them. There were Dall's sheep in the mountains, moose in the valleys, musk-oxen on the tundra, and in summer vast herds of caribou on the wind-swept coastal plains.
Seals were common. Great polar bears patrolled the ice, and fat Barren Ground grizzlies patrolled the land. Here were the breeding grounds of much of North America's waterfowl: the myriad tundra lakes were speckled with ducks and geese, loons and swans. Rivers and lakes were rich in fish: char and inconnu, and immense shoals of herring and fat whitefish.
Most important to the Inuit of this region were the milky-white beluga whales that arrived each year in large pods in late June at the edge of the Mackenzie estuary and remained for six to seven weeks in its shallow, sun-warmed bays and inlets, where they were relatively easy to hunt. The people were the Mackenzie Inuit, the "Beluga Hunters," as archaeologist Robert McGhee of the Canadian Museum of Civilization has called them. When he dug trenches through the thick refuse layers at Kittigazuit, the main village of the Mackenzie Inuit, "87 percent [of all bones] were of beluga." These Inuit took all that a bounteous nature offered, but the beluga large, easily killed, and abundant - was their favorite prey.
While in other parts of the Canadian North the average population density was one person to every 250 square miles (648 km2), 2,500 to 4,000 Mackenzie Inuit lived in settlements near the river mouth. Inuit camps, specks of humanity scattered across the vastness of the Arctic, were usually home to a few families, perhaps 50 people. Kittigazuit, the main village of the Beluga Hunters, had a summer population of 800 to 1,000 people.
Among the Inuit at Kittigazuit at the turn of this century was an orphan boy named Nuligak who lived with his crippled grandmother. "Because I was an orphan and a poor one at that, my mind was always alert to the happenings around me. Once my eyes had seen something, it was never forgotten." He became a famous hunter and, in old age, wrote I, Nuligak, the story of his life, wonderfully vivid glimpses of a long-vanished world.
"The Inuit of those days [about 1900, when Nuligak was five years old lived on game and fish only, and fished and hunted on a grand scale." The 200-yard (823-m)-long Kittigazuit beach was hardly large enough for all the kayaks drawn up there," and the moment belugas were spotted "a swarm of kayaks was launched. At the great whale hunts I remember there was such a large number of kayaks that when the first had long disappeared from view, more and more were just setting out... Clever hunters killed five, seven belugas, and after the hunt the shore was covered with whale carcasses... Once I heard elders say that three hundred whales had been taken.
The great driftwood racks and stages were packed with drying meat, sealskin pokes were filled with fat, ample food for "kaivitivik, the time of dancing and rejoicing which began with the departure of the sun and ended with its return," Nuligak recalled. "In those days the Inuit could make marvelous things": puppets and toy animals, activated by baleen strings and springs, that hopped and danced across the floor of their great winter meeting hall, while Nuligak and the other children watched in wonder. "There was such an abundance of meals, games, and things to admire that these sunless weeks sped by as if they had been only a few days.
Until 1888, the Mackenzie Inuit had little contact with the outside world. That year the southern whalers came and the ancient, unchanging world of the Beluga Hunters collapsed in agony, despair, disease, and death. "Aboriginal Mackenzie Eskimo culture could probably be considered to have become extinct between 1900 and 1910," Robert McGhee noted with scientific detachment.
In 1888, whalers reached the Beaufort Sea, last sanctuary of the rapidly declining bowhead whales. Six years later, 2,000 people wintered at Herschel Island, west of the Delta, soon known as the "Sodom of the North." It was the largest "town' in northwestern Canada, inhabited, according to a Nome, Alaska, newspaper report, "by demons of debauchery and cruelty," the scene, according to horrified missionaries, of "bacchanalian orgies."
Nuligak's memories are less lurid. He remembered the whalers more as friends than as fiends. "White men and Inuit played games together, as well as hunting side by side. We played baseball and wrestled. We danced in the Eskimo fashion to the sound of many drums.
Unintentionally, though, the whalers brought death to the long-isolated Inuit. They needed great amounts of fresh meat. Musk-oxen vanished from the land. Few bowhead whales remained. In 1914, the Royal North-West Mounted Police reported that caribou were virtually extinct in the Mackenzie region. By then, the Beluga Hunters, too, were nearing extinction.
As the plague had ravaged medieval Europe, measles and smallpox epidemics wiped out the Beluga Hunters, who lacked immunity to southern diseases. Of 3,000 people, fewer than 100 survived. In 1900, nearly 1,000 Inuit camped at Kittigazuit. In 1906, a single family remained in this village of death and decay.
Into the vacuum created by the demise of the Mackenzie people flowed Inuit from as far west as Alaska's Seward Peninsula, and even Yuit and Chukchi from Siberia. Traders and trappers came from the south. And whalers from all over the world and from every social stratum - the dregs of San Francisco's slums and a Count Bülow, a remote cousin of the chancellor of the German Reich; Spanish- speaking Africans; Chinese coolies; and people from the Polynesian Islands - - settled in the region and "went native." One day in the town of Inuvik an Inuk girl, a sociology student, asked me: "Where are you from originally?" I told her I was Baltic German, born in Riga, Latvia. "Well, for heaven's sake!" she exclaimed. "My grandfather came from Riga.
These people, then, part Inuit, part everyone, became the new Beluga Hunters, following, to some extent, the millennial customs and traditions of the nearly extinct Mackenzie Inuit. The changes wrought through the coming of the whalers were enormous, but some things had not changed: the coming of the belugas, the need for food, the ancient rhythm of camp life through the seasons.
Even the remnants of this ancient whaling culture seemed fated to fade away. Professor Vagn Flyger of the University of Maryland, who studied the Beluga Hunters in 1961 and 1962, predicted confidently that "Eskimo whale camps will soon be no more," and Nuligak wrote in the 1950s that "the Inuit eat white man's food nowadays." In the late 1970s, the oil companies came, their made- in-Japan module headquarters, with gleaming offices and dining rooms, with swimming pools and cinemas, squatting on the tundra, with their spacecraft-like drilling rigs far out in the Beaufort Sea, all backed by multibillion-dollar exploration budgets. Yet, "the old way of life" persisted. When I went to join the Beluga Hunters in the summer of 1985, twenty-five families from the towns of Tuktoyaktuk, Inuvik, and Aklavik had "returned to the land," to ancient camps along the coast where Inuit had lived and hunted belugas for thousands of years. "From time immemorial this has been our life," said Nuligak.

Some of the methods of capturing these and other birds are sublimely simple ; in New South Wales, Angas tells us, a native would stretch himself on a rock in the sun, a piece of fish in his hand ; this would attract the attention of a bird of prey, which the black would promptly seize by the leg as soon as it tried to carry off the fish. In the same way water-fowl were taken by swimming out under water and pulling them beneath the surface, or, with a little more circumstance, by noosing them with a slender rod, the head of the fowler being covered with weeds as he swam out to his prey, which he dragged beneath the water; as soon as he had the bird in his hand he broke its neck, thrust it into his girdle, and was ready for another victim. Shags and cormorants more often rest on stakes than on the surface of the water ; accordingly, on the Lower Murray, stakes were set up for them ; the native swam out with his noose and snared them as before. During dark nights they drove shags from their resting-places, catching them as they tried to settle, and receiving in the process severe bites from the terrified birds. Almost equally simple was the method of taking black swans in West Australia. At the moulting season young men lay in ambush on the banks till the birds had got too far away from deep water to be able to swim off; then they ran round them and cut off their retreat. The West Australians would also kill a bird as it flew from its nest ; one man creeping up threw his spear so as to wound it slightly as it sat, and the other brought it down with his missile club as it flew off. Boldest of all, perhaps, is the method of taking turkey bustards in Queensland ; the fowler hangs a moth or a grasshopper, sometimes even a small bird, to the end of a rod, on which is also a noose. With a bush in front of him he creeps up to his prey, which is fascinated by the movements of the animal on the rod ; as soon as the black is near enough he slips the noose over its head and secures it. In the Boulia district pelicans are taken from ambushes ; the fowler throws shells some distance into the water, attracting the bird, which thinks the splashes are made by fish rising ; then the black pats the water with his fingers, to mimic the splashing of fish on the surface, the pelican swims round and presently falls a victim to the boomerang, or is captured by hand. The Torres Straits pigeon is taken by simply throwing any ordinary stick into the flock, as it passes down to the foreshore at no great distance from the ground ; or it may be knocked down in a more elaborate way. The flocks take the same path every night, and a high bushy tree is selected which lies in their path ; the black holds in his hands a thin switch, some fifteen feet long, which is tied to his wrist to prevent it from being accidentally dropped ; he himself is lashed to the tree to prevent accidents ; and when the pigeons come past he sweeps at them, generally bagging a fair number. On Hinchinbrook Island, the roosting-trees were known to the natives. They prepared fires beneath in the daytime ; when the pigeons had retired to rest, the fires were lighted and down came the birds. On the Tully the black observes on what trees the cockatoos roost. Then he makes fast to a suitable branch a long lawyer cane, which reaches to the ground ; at night he mounts this, holding on by his first and second toes when he moves his hands; slung round his neck he carries a long thin stick ; and with this he knocks the birds down as soon as he is within reach of them. Small cockatoos and other birds are also captured with bird-lime, which is spread not only on the branches on which they roost, but also on the young blossoms. The swamp pheasant is taken on its nest by means of a net ; in Gippsland they are taken on the nest by hand. The boomerang is a very effective weapon in a large flock of birds. Grey describes how they are knocked down with the kyli at night ; wounded birds are used as decoys ; for these birds seem to be much attached to each other. One is fastened to a tree, and its cries bring some of its companions to its aid. In Victoria and South Australia wickerwork erec- tions were made for the birds to settle on ; near them the black lay in ambush, his noose ready, and attracted his prey by imitating their calls. Emus are powerful birds, weighing perhaps 130 lbs,, and they are not so easily captured. Strong nets, sometimes fifty yards in length, are often employed to take them. The hunter notes the track by which the bird visits a water-hole, and sets up his net some thirty or forty yards behind it, the operation taking no more than five minutes ; when it returns, its flight is prevented by stationing men at possible avenues of escape, the hunters rush out and the bird is entangled in the net or knocked over with boomerangs or nulla- nullas. Sometimes an alley was built, broad at the entrance and narrowing continually, till it ended in a net ; near the opening, midway between the ends, the hunter concealed himself and imitated the call of the bird ; this he does by means of a hollow log, some two or three feet long, from which the inside core has been burnt. Holding this close to the ground over a small excavation, he makes a sort of drumming sound ; the emu struts past the men in ambush, and is easily driven into the net. Emu pits are dug, either singly or in combination ; near the feeding-grounds sometimes they are combined with a fence, opposite the openings of which they are placed, with a large central pit, in which are ambushed three or four blacks to call the birds. The emu is hunted with dogs or surrounded by the whole of a black camp ; it may also be speared by stalking it. The hunter rubs himself with earth to get rid of any smell from the body ; then with bushes in front of him and a collar-like head-dress in some parts, he makes for the bird. Young cassowaries are often run down. Ducks are often taken by stretching a long net across a river or lagoon ; the ends are fixed in the trees or on posts ; and one or more men go up-stream at a distance from the river, and then drive the birds down. At a suitable distance from the net they are frightened and caused to rise ; then a native whistles like the duck-hawk, and a piece of bark is thrown into the air to imitate the flight of the hawk ; at this the flock dips and many are caught in the net. For this mode of cap- ture four men are required. Ducks are also stalked and speared, or snared by fixed nooses set in the swamps, according to a statement of Morrell's, which, however, he leaves us to infer the kind of bird caught in this way. Flock pigeons are taken by a method unlike any described. Their habits are noted, and a small arti- ficial water-hole made in the neighbourhood of their usual drinking-place ; near this the fowler conceals himself, with a net ten or twelve feet in length laid flat on the ground close to the water ; the lower edge is fixed to the ground by means of twigs, and along the whole length of the upper edge runs a thin curved stick, the end of which the black holds in his hand ; the pigeons sit on the water like ducks ; and as soon as a favourable opportunity presents itself, the fowler, with one movement of the arm, turns the net over and bags the unsuspecting birds. For scrub turkeys a series of lawyer cane hoops are set up with connecting strips ; this is baited in the morning with nuts, fruit, etc., and about sundown he takes up his position in his ambush some twelve feet away right in front of the opening ; as soon as the turkey walks in, the black rushes out and secures it. In West Australia birds were generally cooked by plucking them and throwing them on the fire ; but when they wished to dress a bird nicely they drew it and cooked the entrails separately, parts of them being considered great delicacies. A triangle was then formed round the bird by three red-hot pieces of stick against which ashes were placed ; hot coals were stuffed inside it, and it was served full of gravy on a dish of bark. In Victoria a sort of oven was made of heated stones on which wet grass was strewn ; the birds were placed on the grass and covered with it ; more hot stones were piled on and the whole covered with earth. In this way they were half stewed. An ingenious method of cook- ing large birds was to cover them with a coating of mud and put them on the fire; the mud-pie was covered with ashes and a big fire kept up till the dish was ready ; then the mud crust was taken off, the feathers coming with it, and a juicy feast was before the hungry black. The Austrah'an is by no means uncivilised ; he appreciates high game as much as any gourmet amongst us, but he enjoys it in a somewhat different way. The Cooper's Creek aborigines collect in a bladder the fat of an exceedingly high, not to say putrid pelican, and bake it in the ashes ; then each black has a suck at the bag, the contents of which are distinctly stronger than train-oil, and what runs out of the mouth is rubbed on the face ; thus nothing is wasted.
